12.1 HISTORY
Vanilla is the most popular and most widely used flavor. Vanilla was introduced to Europe by the Spanish conquistadors who brought vanilla beans from Mexico in the sixteenth century and vanilla flavor has been gaining in popularity ever since. Vanilla is the most popular and loved flavor, apparently because it evokes emotions of comfort and familiarity (Havkin-Frenkel 2009). In the United States, vanilla has been sold in retail stores for over 100 years. Vanilla is part of our everyday life. It can be found in ice cream, candies, baking products, drinks, and food flavorings. The sale ofvanilla in retail stores declined in the 1980s and 1990s, because women joining the work force preferred ready-made baked goods. In the last few years there has been a shift in trends towards gourmet, natural, organic, and health consciousness and vanilla has found its original place restored. With additional explosions of new dishes and new health and culinology trends (Havkin-Frenkel 2009) we can now find vanilla in every type of store, such as supermarkets, drug stores, art stores, department stores, convenience stores, dollar stores, fresh produce and flower stores, restaurants and even clothing stores. There are hundreds of sites on the internet selling vanilla products.
