Many credible vanilla extracts list ingredients such as “vanilla bean extractives in water” at the top of the ingredient list. The present authors believe that this statement is confusing because the label conveys the impression that product content is mostly vanilla extractive rather than water. Another source of vagueness is confusion of bean origin and bean species. For example, “Tahitian bean” denotes a geographic origin, although the term is commonly used to imply that the species used is Vanilla tahitensis. Farmers in Papua New Guinea (PNG) grow both Vanilla tahitensis and Vanilla planifolia. However, some vanilla extracts carrying the name pure Tahitian beans in fact originate from PNG (samples 24 and 33, personal communication).
